We sit down with Zarqa Nawaz, the creator of Little Mosque on the Prairie, the world's first sitcom about a Muslim community living in the west. She has recently released both a new book and a new show (out now on CBC Gem), and joins us to share her insights on storytelling — from how her faith informs her writing process, to her personal journey in bringing stories like hers to the mainstream, to the inherent value of depicting the ordinary.
Coconut Thumbprint Cookies (inspired by The Buck Naked Kitchen):
Ingredients:
2 cups unsweetened shredded coconut
1/2 cup coconut flour
1/4 cup coconut sugar
1/2 cup maple syrup
1/4 cup + 1 tablespoon melted coconut oil
1 egg
1 teaspoon vanilla
1 teaspoon cinnamon
pinch of salt
• Jam of choice (Frankie and I used raspberry)
Method
• Preheat oven to 350 degrees F.
Roll your cookies into balls and then use your thumb or a spoon to press down and form the dip for the jam to settle in. Spoon the jam in and then bake for 15-20 minutes until cookies are golden brown at the edges. Let sit to cool until firm enough to hold. They will be crumbly when warm.
