This week I interviewed YouTubers Jessii Vee and Mandii Vee — their first podcast interview ever, and one of the few “events” they have done as sisters. They shared about how they have reframed their entrepreneurship during COVID and the ways their family supports one another — including family meetings to brainstorm videos!
They also talked about the bullying each of them endured and how they have moved to healthier places in their lives and even learned from those hard times. I’m inspired by these two ladies boldly carving out creative niches for themselves. As Jessii said, “I just want to make things.”
In the spirit of making things, Nat offers up…
Cauliflower Power Soup
1 whole head of cauliflower
3 cloves of garlic
1 onion
Chicken or veg stock
1 tsp of dried thyme (or a couple of sizeable stalks if you have fresh)
2 bay leaves
¼ cup of nutritional yeast
Salt and pepper to taste
Rough chop onion and heat in a pan over medium/high heat till fragrant. Add chunks of your cauliflower to the onion and stir around before rough chopping and adding your garlic. Add bay leaves and thyme (or oregano… that’s what I used last time I made it when I found out my thyme container was empty!) and then 3 cups of broth. Cover and let simmer until cauliflower is soft.
Remove bay leaves and pour mixture into a blender. Blend and add stock as needed to smooth the soup out.
Pour back into the pan and add nutritional yeast and salt and pepper to taste. I have used coconut milk in this recipe at the end just to add a touch of creaminess but it is definitely not needed. The blended cauliflower makes for a creamy enough texture to make Frankie say, “You make the right stuff Mama!” Enjoy!
