This week we're reframing ambition — we've got lots of it, and so there is much to unpack! We examine differences in our own ambitions and how our outlooks have evolved over time. Can we disconnect ambition from other things that might be more unhealthy or negative, like jealousy and competition? Also, is ambition a triangle or some other shape? We ponder this too with our usual deep dive energy.
Vegetarian Bolognese
This recipe is a really basic sauce that’s elevated thanks to the addition of soft goat cheese. No meat here and lots of flavour! Feeds a family of three or four easily served over a pasta of your choice (I used brown rice noodles).
Ingredients:
1 package of Beyond Meat mince
1 medium onion, finely diced
2-3 large cloves of garlic, finely diced
1 carrot, finely diced
2 stalks of celery, finely diced
1 tbsp of balsamic vinegar
1 tsp each dried basic, oregano
1/2 tsp of dried thyme
1 tsp salt
1 can of tomatoes (I used whole)
1 small log of soft goat cheese
How to:
Brown your mince over medium heat in a cast iron pan that will be deep enough to hold the sauce ingredients. (If you don’t have one, your favourite pot will do!)
Add your onion and stir about in the mince until translucent, and then add the garlic, carrots and celery. Stir constantly for 2-3 minutes.
Add your spices and then add your balsamic (or wine if that’s what you have on hand) to deglaze the pan.
Add your can of tomatoes and help them to break down a bit with a wooden spoon.
Bring the sauce makings to a boil for a minute or two and then turn the heat down to low and cover to simmer for 15-20 minutes.
After the sauce has come together, add your goat cheese and stir in until fully incorporated. Taste and add salt/pepper if needed.
I added the cooked pasta to the sauce and then gently stirred to coat, serving each bowl with pan-fried asparagus and chopped parsley. No one missed the meat! Let us know how you like this recipe and please share it with friends/family/veggie-lovers. Spread the Reframeables love!
