Nat’s Greens + Eggs = no need for ham 😉
Simple food in complex times = the most comforting of comfort foods! I’m playing on the Dr. Seuss title here (Green Eggs and Ham), and really think this baked eggs on greens is perfect as is. No need for salty meat in this combo because the massaged kale is already salted.
Ingredients:
3 or 4 eggs
2 cups of chopped kale (I used a whole head)
Two green onions, chopped
Salt, pepper and olive oil/butter
How to:
Preheat oven to 350.
Chop kale roughly and throw into a bowl. Sprinkle with a healthy grind or two of sea sat and then get your hands in that bowl and massage your kale for a minute!
Heat up your cast iron pan and add a glug of olive oil or butter.
Add your kale and green onion, gently heating through till your kale turns a shiny, slightly darker green. Once it’s wilted make a hole in the kale for each egg. Drop your eggs in their little kale home and then remove from burner and put into oven to bake for 5 minutes. Check doneness of yolk with a gentle finger poke and when cooked to your liking remove from oven and serve with hot sauce and toast!
