We open doors on some raw moments of failure, forgiveness, and loss in our lives, and ask if we can reframe these in a loving way. Can we use them to propel self-discovery?

Quinoa flour and Flaxseed Apple Muffins
The science of muffin making requires a level of patience that I don’t normally have in the kitchen. I like to throw flavours together and enjoy what emerges. But baking I’ve found isn’t as forgiving as a dinner mash-up. So when Bec requested an apple recipe for our Pinterest, I decided to pull out the baking test kitchen to get it right. Here’s what I settled on:
Ingredients:
1/2 cup of quinoa flour
1/4 cup of ground flax seed
1/4 cup of coconut flour
2 eggs
1/3 cup + 1 tbsp of olive oil (you can use any kind, but I like the stronger flavour of olive oil to balance the stronger flavour of the quinoa flour)
1/3 cup of honey
1 tsp of vanilla
1 tsp each BS and BP
A pinch of salt
A largish apple of your choice, grated with the peel on
Brown crystallized sugar (or something of that ilk that you have on hand - white sugar will do) to sprinkle on top before popping them in the oven.
How to:
Mix all of ingredients together and then spoon the fluffy batter into muffin tins. These measurements made 10 small muffins (or 6 large ones if you prefer). Bake at 350 for 12-13 minutes. Do not overbake! Please let us know how they turn out in your test kitchen.
