Today, I’m joined by writer, poet, and educator Preeti Vangani. Preeti’s work covers themes of family, grief, sexual politics, and the body. In our conversation, we discuss her transition from the corporate world to creative writing, where she draws inspiration from, and what she's currently working on. I made these beauties in my brother-in-law’s kitchen in the south of England. Their oven temperatures are different from how we roll in Toronto so the success of these muffins was a happy accident. Note the temperature shift in this recipe! It’s key! These quantities made 12 small muffins.
Ingredients:
1 cup of almond flour
1/2 cup of oat flour
1 egg
1 tbsp of honey
1 tsp each of bp and bs
A pinch of salt
2 small ripe bananas (or 1 large), mashed
1 tsp of vanilla
How to:
Pre-heat the oven to 400. Mix all the ingredients together and scoop into muffin tray. Bake for 5 minutes and then turn the temperature down to 350 for another 12 minutes. Slide a toothpick or sharp knife in and if it comes out clean, you’re all set! Let cool for 5 min and then enjoy.
