Easy French Onion Soup
(This recipe makes enough for four adults and one adventurous tween!)
Ingredients:
4 to 5 good sized onions
A tbls of butter
A tsp of Worcestershire sauce
A tbls of balsamic vinegar
A quart of beef broth
Grated Gruyère cheese
How to:
Slice the onions as thin as possible
Add the butter to your pot and heat to medium, then add your onions and stir to coat. Put the lid on your pot and let the onions sweat for a good 15 minutes.
Remove lid, check to see that the onions have softened, then add the vinegar, Worcestershire sauce and beef broth. Stir and bring mixture to a boil for 5 min and then bring down to a simmer and cover again.
While the soup is simmering it’s time to make the toasts! I used baguette, a little bit of butter, garlic salt and grated Gruyère cheese. They went under the broiler until the cheese melted and then I placed them on top of the bowls of soup. (You could add more cheese and use a little kitchen torch to melt it, but I’m not a big dairy person and aim to make all of my recipes as dairy-minimum as possible. 🤷🏼♀️ But do you!)
