Perfectly Roasted Cauliflower
I’m going to do a mini-series on side dishes because they elevate a meal, in my opinion, and can be actually be more exciting than the main dish. In a recipe world filled with one bowl dishes (and I’m often down for that kind of dinner), there’s something special about a few elegant sides that stand out…like these roasted cauli-bites!
Ingredients:
A head of cauliflower, cut into bit sized chunks
An onion, roughly chopped
Olive oil
Salt
Garlic powder
Nutritional yeast
How To:
Preheat your oven to 425
In a large bowl toss your veg with the seasoning (I don’t measure but about a tsp of salt and garlic powder + 2 tbls of nutritional yeast and enough oil to help the seasoning to stick)
Bake for 15 min and then turn the veg so the other side gets pretty and toasted like what you see below.
Bake for another 10 minutes and you’re ready to serve alongside crispy tofu or grilled pork loin or any other combo you see fit!
